    虚血性脳障害は,脳に酸素や栄養分を送る動脈が閉塞して生じる脳組織の循環障害であり,その対策が急がれている。一方,亜硝酸塩は野菜に多く含有される硝酸塩から口腔細菌によって生じ,体内に貯蔵され,虚血時にNOに変換されるNOドナーであることが明らかになってきた。このことは,硝酸塩や亜硝酸塩の摂取が虚血性脳疾患の予防や発作時の組織損傷を軽減できる可能性を示している。しかし,その作用メカニズムや疾患予防に適した摂取量等についての詳細な知見は得られていない。したがって,本研究ではラットの中大脳動脈閉塞再灌流モデルを用い,硝酸塩および緑葉野菜の摂取による脳保護効果メカニズムを調査することを目的とした。
